Recommended food pairings: This flavoursome wine is an ideal partner for a wide variety of robust winter dishes. It would be perfect with a slow cooked lamb shanks served on Mediterranean vegetables or pan fried minute steak with a light pepper sauce. Also try it with an aged cheddar served with nut bread for a fantastic winter combination.

Growing Conditions: The grapes used to make this wine were grown at our Heathcote vineyard in central Victoria. The fruit was harvested in early March at baumé levels ranging from 13.5 to 14.8.

Winemaking notes: Following fermentation the wine spent 6 months in older French oak barriques and puncheons. The wine was bottled with an alcohol of 13.5%, a pH of 3.4, and an acid level of 6.3g/l.
