Our ‘With’ and ‘Without’ series is a chance for us to showcase the differences between two techniques of Dry Hopping - Clean Fusion - versus our former, more traditional method. ‘With’ DIPA is capped and fermented under pressure early on in its fermentation to capture the character of our house yeast; something we couldn’t do with our ‘traditionally’ made hoppier beers. A full hop bomb, with Citra®, Mosaic®, Simcoe®, and Nelson Sauvin loaded into our Clean Fusion dry hopping regime for 72 hours of extraction and activation. We find a more true-to-type expression of the hops comes through, with small nuances that are usually driven off, providing a truly unique hop-driven drinking experience with that something extra.
